Don't know how widespread the news has been, but we have had record flooding here in SETX. My office in Orange was evacuated on tues. Put in 68 hours this week. Not much cooking going on here. No fatalities, tho, the one bright spot.

Thank goodness no one died and YOU and yours are safe, Dana.

 

Not a lot of cooking around here but using up what I had made: 1/2 a roasted capon with root veg.  After the initial roast  it morphed into capon tetrazzini, capon club sandwich on a nice toast, capon quesidilla, capon noodle soup and the frame is about to go into the stock pot with all the veg scraps.  IF and that's a big if it warms up a bit this week I'll use it to make some risotto.

That's what I call thrifty!!! Excellent! ! Looks like we will be moving back to our office this week, as floodwaters are receding. Looks like another long week

Made some Ruhlman bacon this week, so will be slicing and vacpacking for the next few days. This bacon is soooooo worth the effort.
Our little garden is producing a multitude of cukes, and I've made 3 batches (31 pints ) of bread and butter pickles. The tomatoes didnt do well at all. We've had way too much rain.

Our son's fig bush is doing well. I put up 3 pints yest, but am not crazy about the recipe I used. Had cinnamon and ginger, tastes more like Christmas. Looking for a jam with more figgy direction. Looks like his bush will give me lots if opportunity. I just love this canning thing!

Made some seafood enchiladas last night for Colin and Any and our friends Timmy and Linda. Also, Ruhlman ceviche from Twenty. Big hit. I hadn't made either for some time. Forgot how good they were.
